  • 2 tablespoons olive oil (for marinade and grilling)
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lime
  • 1 large ripe mango, peeled and diced
  • 1/2 small red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt, to taste
  • 8 small corn or flour tortillas (warmed before serving)
  • Optional toppings: sliced avocado, crumbled cotija cheese, extra lime wedges

Instructions

  1. Prepare the shrimp marinade by whisking together olive oil, smoked paprika, cumin, chili powder, garlic powder, salt, pepper, and lime juice in a medium bowl.
  2. Toss the peeled and deveined shrimp in the marinade until fully coated. Cover and refrigerate for at least 15 minutes and up to 30 minutes.
  3. Make the mango salsa by combining diced mango, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in a bowl. Stir gently and adjust seasoning as needed. Set aside.
  4. Preheat your grill or grill pan to medium-high heat.
  5. Lightly oil the grill grates or pan to prevent sticking. Grill the shrimp in a single layer for about 2-3 minutes per side until opaque and slightly charred.
  6. Warm the tortillas by wrapping them in foil and heating on the grill for 1-2 minutes per side or in a dry skillet until pliable.
  7. Assemble the tacos by placing grilled shrimp on each tortilla, topping with mango salsa, and adding optional toppings like avocado or cotija cheese. Serve immediately with extra lime wedges.

Notes

Do not marinate shrimp longer than 30 minutes to avoid ‘cooking’ them with lime juice. Keep an eye on shrimp while grilling to prevent overcooking. Mango salsa can be made a few hours ahead. Use corn tortillas for gluten-free and skip cheese or use vegan cheese for dairy-free. Warm tortillas just before serving to keep them soft.
