A crisp and savory salad featuring shaved Brussels sprouts, crispy bacon, and nutty Parmesan cheese, tossed in a tangy homemade dressing.

  • 1 pound fresh Brussels sprouts, shaved thinly
  • 68 slices bacon, cooked crispy and crumbled
  • Β½ cup Parmesan cheese, freshly grated or shaved
  • Β½ cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Optional: sliced almonds or dried cranberries

Instructions

  1. Rinse the Brussels sprouts thoroughly under cold water and pat dry. Shave them thinly using a mandoline or sharp knife and place in a large mixing bowl.
  2. Heat a skillet over medium heat and cook the bacon until crispy and golden. Transfer to a paper towel to drain excess grease, then crumble into small pieces.
  3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper until well combined. Taste and adjust seasoning as needed.
  4. Add crumbled bacon and grated Parmesan to the shaved Brussels sprouts in the mixing bowl. Pour the dressing over the top.
  5. Use tongs or clean hands to toss the salad until everything is evenly coated in the dressing. Add more salt and pepper if needed.
  6. Optional: Toss in sliced almonds, walnuts, or dried cranberries for added crunch or sweetness.

Notes

For best results, toss the dressing right before serving to keep the sprouts fresh and crisp. Massage shaved sprouts with a bit of olive oil if they seem tough.
