  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced

  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce (optional)
  • 1 teaspoon brown sugar
  • 1 cup fresh Thai basil leaves (loosely packed, roughly chopped)
  • 1 pre-made pizza dough ball (~12-inch/30 cm diameter) or homemade dough
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup thinly sliced red onion
  • 1/2 cup sliced bell peppers (red or yellow)
  • 1/3 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lime juice (freshly squeezed)
  • 12 tablespoons warm water (for thinning)
  • 1 teaspoon toasted sesame oil (optional)
  • Chopped fresh cilantro (optional garnish)
  • Crushed peanuts (optional garnish)
  • Extra Thai basil leaves (optional garnish)
  • Fresh lime wedges (optional garnish)

Instructions

  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.
  2. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add minced garlic and sliced chili, stirring until fragrant (about 30 seconds).
  3. Add ground chicken, breaking it up with a spatula. Cook until no longer pink, about 6-8 minutes.
  4. Stir in soy sauce, fish sauce (if using), and brown sugar. Cook for another 2 minutes until well combined and slightly caramelized.
  5. Remove from heat and fold in chopped Thai basil leaves. Set aside to cool slightly.
  6. On a lightly floured surface, roll out dough to approximately 12-inch diameter. Transfer to a parchment-lined baking sheet or pizza peel if using a stone.
  7. Sprinkle shredded mozzarella evenly over the dough, followed by cheddar cheese. Scatter sliced red onions and bell peppers on top.
  8. Distribute the cooked Thai basil chicken evenly over the cheese and vegetables. Drain excess liquid if chicken seems wet.
  9. Bake the pizza in the oven for 12-15 minutes, or until crust is golden and crisp, cheese is bubbly, and toppings look roasted.
  10. While pizza bakes, whisk together peanut butter, soy sauce, honey, lime juice, and toasted sesame oil in a small bowl. Add warm water a tablespoon at a time until smooth and pourable.
  11. Remove pizza from oven and let cool for 2-3 minutes. Drizzle peanut sauce over the top in a zigzag pattern.
  12. Sprinkle with chopped cilantro, crushed peanuts, and extra basil leaves. Serve with lime wedges on the side.
