Ingredients

Scale
  • 1 medium-sized head of cauliflower, broken into bite-sized florets
  • 1 cup (240 ml) Turkish or plain yogurt
  • 2 tablespoons (30 ml) olive oil
  • 2 teaspoons (4 g) paprika
  • 1 teaspoon (2 g) cumin
  • 1 teaspoon (2 g) chili flakes
  • 2 cloves of garlic, minced
  • Salt and pepper, to taste
  • 2 tablespoons (30 g) butter, melted
  • Fresh parsley, chopped finely for garnish

Instructions

  1. Preheat the oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.
  2. Wash the cauliflower and dry it thoroughly. Cut it into bite-sized florets and set aside.
  3. In a mixing bowl, combine yogurt, olive oil, paprika, cumin, chili flakes, garlic, salt, and pepper. Whisk until smooth.
  4. Add the cauliflower florets to the bowl with the yogurt mixture. Toss well until every piece is evenly coated.
  5. Spread the coated cauliflower on the prepared baking sheet in a single layer.
  6. Roast in the oven for 25-30 minutes, flipping the florets halfway through, until golden and slightly crispy on the edges.
  7. While the cauliflower is roasting, melt the butter in a small saucepan over low heat.
  8. Remove the cauliflower from the oven and drizzle the melted butter over the top. Sprinkle with chopped parsley.
  9. Serve warm, straight out of the oven, or let it cool slightly before serving.
