Instructions

  1. In a large bowl, sift together the flour, baking powder, baking soda, salt, and sugar.
  2. In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently fold with a spatula just until combined; some small lumps should remain.
  4. Let the batter rest for 5 to 10 minutes at room temperature.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Pour ¼ cup (60 ml) batter per pancake onto the skillet.
