These Fluffy Mashed Potato Puffs with Cheese are bite-sized delights with a crispy, golden crust and warm, creamy center. Perfect for parties or cozy family meals, they are quick and easy to make with simple ingredients.

Ingredients

Scale
  • 2 cups mashed potatoes (leftover or freshly made, slightly cooled)
  • 1 cup shredded cheddar cheese (sharp or mild)
  • 2 large eggs, beaten
  • 1/4 cup all-purpose flour (use gluten-free flour for a GF option)
  • 2 tablespoons green onions, finely chopped
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper, freshly ground
  • 2 tablespoons butter, melted
  • 1/2 cup breadcrumbs (optional, for extra crispy exterior)
  • Cooking spray or oil (for greasing the muffin tin or baking tray)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a mini muffin tin with cooking spray or melted butter.
  2. In a large mixing bowl, combine mashed potatoes, shredded cheddar cheese, beaten eggs, all-purpose flour, chopped green onions, salt, and black pepper. Mix everything together until fully combined.
  3. If desired, mix breadcrumbs into the mixture or reserve them for coating the puffs later.
  4. Using a spoon or small scoop, fill the prepared muffin tin with the mashed potato mixture, pressing it down gently to ensure even cooking.
  5. Brush the tops of the potato puffs with melted butter for a golden, crispy finish.
  6. Place the muffin tin in your preheated oven and bake for 18–20 minutes, or until the tops are lightly golden and the edges start to crisp.
  7. Allow the puffs to cool in the tin for about 5 minutes before gently removing them using a spoon or knife.
  8. Serve warm with your favorite dipping sauce, like sour cream, ranch, or spicy sriracha mayo.

Notes

[‘Let freshly made mashed potatoes cool slightly before mixing to avoid cooking the eggs prematurely.’, ‘For extra crunch, add breadcrumbs to the mixture or sprinkle them on top.’, ‘Check the puffs after 18 minutes to avoid overbaking.’, ‘Feel free to customize the recipe with ingredients like bacon bits, jalapeños, or fresh herbs.’]
