  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Rinse the cucumber thoroughly. Slice it thinly into rounds, about 1/8 inch thick.
  2. Halve the cherry tomatoes.
  3. Dice the avocado into bite-sized cubes.
  4. Thinly slice the red onion.
  5. Place the cucumber, tomatoes, avocado, and red onion in a mixing bowl. Gently toss to mix without mashing the avocado.
  6. Sprinkle the chopped parsley or cilantro and everything bagel seasoning over the veggies.
  7. Drizzle the olive oil and fresh lemon juice over the salad.
  8. Season with sea salt and freshly ground black pepper to taste.
  9. Toss gently again, ensuring the avocado stays intact.
  10. Optional: Let the salad rest for 5 minutes to allow flavors to meld and seasoning to soften slightly while keeping its crunch.

Use ripe but firm avocados to avoid mushiness. Thinly slice cucumbers for better texture. Toss gently to keep avocado intact.
