  • 2 fresh fennel bulbs, thinly shaved
  • 2 sweet apples (Honeycrisp or Pink Lady), thinly shaved
  • 2 ounces Pecorino cheese, shaved or grated
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: fresh parsley or mint, chopped
  • Optional: toasted nuts like walnuts

Instructions

  1. Trim off the stalks and fronds of the fennel bulb, saving some fronds for garnish if desired. Shave the bulb into thin slices using a mandoline slicer or sharp knife.
  2. Core the apples and shave them into thin slices, similar to the fennel. Toss the slices with a bit of lemon juice to prevent browning.
  3. In a small bowl, whisk together olive oil, lemon juice, honey, and Dijon mustard. Season with salt and pepper to taste.
  4. In a large mixing bowl, gently toss the fennel and apple slices with the vinaigrette until coated evenly.
  5. Shave Pecorino cheese over the top of the salad using a vegetable peeler or grate it if you prefer smaller pieces.
  6. Optional: Sprinkle with chopped parsley, mint, or fennel fronds and toasted nuts for added texture and flavor.
  7. Plate the salad beautifully and serve immediately for the best crunch and freshness.
