Fresh Greek Yogurt Berry Parfait Recipe with Easy Homemade Honey Granola

A quick and easy parfait featuring creamy Greek yogurt, fresh mixed berries, and crunchy homemade honey granola. Perfect for breakfast, brunch, or a light dessert.

  • 2 cups (180g) old-fashioned rolled oats
  • 1/2 cup (60g) raw almonds, chopped
  • 1/4 cup (20g) unsweetened shredded coconut (optional)
  • 1/4 cup (85g) honey
  • 2 tablespoons (30ml) olive oil or melted coconut oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 2 cups (475ml) plain full-fat Greek yogurt
  • 1 1/2 cups (225g) fresh mixed berries (strawberries sliced, blueberries, raspberries, blackberries)
  • Honey or maple syrup, to taste (optional, for drizzling)
  • Fresh mint leaves, for garnish (optional)

Instructions

  1. Preheat oven to 325°F (160°C). Line a rimmed baking sheet with parchment paper.
  2. In a medium bowl, combine rolled oats, chopped almonds, shredded coconut (if using), ground cinnamon, and a pinch of sea salt.
  3. In a small bowl, whisk together honey, olive oil or melted coconut oil, and vanilla extract until smooth.
  4. Pour the wet mixture over the dry ingredients and stir thoroughly to coat evenly.
  5. Spread the granola mixture in an even layer on the prepared baking sheet.
  6. Bake for 20 to 25 minutes, stirring halfway through (around 12 minutes) to prevent burning and ensure even toasting. Granola should be golden brown and aromatic.
  7. Remove from oven and let granola cool completely on the baking sheet to crisp up.
  8. To assemble the parfait, spoon about 1/3 cup (80ml) Greek yogurt into a glass or bowl, add about 1/4 cup (40g) fresh mixed berries, then sprinkle a generous handful of cooled honey granola on top.
  9. Repeat layering until the glass or bowl is filled, finishing with granola and a few berries on top.
  10. Drizzle with honey or maple syrup if desired and garnish with fresh mint leaves.

Notes

Do not overcrowd the baking sheet to ensure granola crisps evenly. Stir granola halfway through baking to prevent burning. Let granola cool completely before assembling parfait to maintain crunch. Use fresh berries for best texture; if using frozen, thaw and drain well. Granola can be stored in an airtight container at room temperature for up to two weeks. For dairy-free or vegan versions, substitute Greek yogurt with coconut or almond yogurt and honey with maple syrup.
