  • 1 jalapeño, seeded and minced (optional)
  • 2 tablespoons chopped fresh cilantro

  • 1 cup sour cream (or Greek yogurt)
  • 1 teaspoon lime zest
  • 1 cup shredded sharp cheddar cheese
  • 1 cup finely chopped green onions
  • ½ cup diced black olives
  • 1 small red bell pepper, finely diced

Instructions

  1. Prepare the Creamy Guacamole: In a medium bowl, mash the avocados using a fork until creamy but with some texture. Stir in the lime juice, garlic powder, and salt. Taste and adjust seasoning. Set aside. (About 5 minutes)
  2. Season the Refried Beans: In a separate bowl, mix the refried beans with ground cumin. Spread this evenly in the bottom of your serving dish. (2 minutes)
  3. Make the Fresh Salsa: Combine diced tomatoes, red onion, jalapeño (if using), cilantro, salt, and pepper in a bowl. Stir gently to mix. (5 minutes)
  4. Layer the Dip: On top of the refried beans, spread an even layer of sour cream mixed with lime zest. Then add the fresh salsa layer. Follow with a generous layer of the creamy guacamole. (7 minutes)
  5. Add Cheese and Veggie Toppers: Sprinkle shredded cheddar cheese evenly over the guacamole layer. Finally, top with chopped green onions, diced black olives, and red bell pepper for that perfect pop of color and crunch. (3 minutes)
  6. Chill and Serve: Refrigerate the dip for at least 30 minutes to let flavors meld. Serve chilled with tortilla chips, veggie sticks, or your favorite dippers. (30+ minutes chilling)

Notes

Use ripe avocados that yield slightly to gentle pressure but are not mushy. Lime juice prevents guacamole browning. Cover guacamole layer with plastic wrap pressed directly on the surface to minimize air exposure. Add a teaspoon of water or extra lime juice if guacamole is too thick to spread. Assemble a few hours before serving and add veggie toppings last to keep them fresh and crunchy.
