  • 1 cup honey (local, raw preferred)
  • 1 cup water
  • 1 cup freshly squeezed lemon juice (about 45 medium lemons)
  • 1 pint fresh strawberries, hulled and sliced (can substitute frozen)
  • 1012 fresh basil leaves, bruised gently
  • 4 cups sparkling water or soda water, chilled
  • Ice cubes
  • Extra basil sprigs and strawberry slices for garnish (optional)

Instructions

  1. Make the Honey Syrup: Combine 1 cup honey and 1 cup water in a medium saucepan. Warm over medium heat, stirring occasionally until the honey dissolves completely, about 5 minutes. Remove from heat and let cool to room temperature.
  2. Juice the Lemons: While the syrup cools, juice 4-5 medium lemons to yield about 1 cup of fresh lemon juice. Strain out seeds.
  3. Muddle the Strawberries and Basil: In a large pitcher, add the sliced strawberries and bruised basil leaves. Gently press with a muddler or wooden spoon a few times to release juices and aromas without turning into mush.
  4. Combine Ingredients: Pour the cooled honey syrup and fresh lemon juice into the pitcher with the muddled strawberries and basil. Stir gently to combine.
  5. Strain (Optional): For a smooth lemonade without pulp or basil bits, pour the mixture through a fine mesh strainer into another pitcher or bowl, pressing out as much liquid as possible.
  6. Add Sparkling Water and Ice: Just before serving, add 4 cups chilled sparkling water and plenty of ice cubes. Stir gently to combine without losing bubbles.
  7. Garnish and Serve: Pour into glasses, garnish with fresh basil sprigs and strawberry slices if desired, and enjoy immediately.

Notes

Use fresh ingredients for best flavor. Cool honey syrup before mixing to avoid wilting basil. Gently bruise basil leaves to release aroma without bitterness. Add sparkling water just before serving to keep bubbles lively. Adjust sweetness or tartness to taste. Substitute honey with maple syrup for vegan option.
