A quick and easy refreshing summer drink combining fresh strawberries, zesty lemon, and a hint of mint for ultimate refreshment.

  • 1 pound (450 grams) fresh strawberries, hulled and sliced
  • 4 large lemons, juiced (about 1 cup or 240 ml lemon juice)
  • 1015 fresh mint leaves
  • 1/2 cup (100 grams) granulated sugar
  • 4 cups (960 ml) cold water
  • Ice cubes as needed
  • Optional: splash of sparkling water, lemon slices, whole strawberries for garnish

Instructions

  1. Rinse, hull, and slice about 1 pound (450 grams) of fresh strawberries. Place them in your blender or food processor.
  2. Pulse or blend the strawberries until you get a chunky puree, about 30 seconds. For smoother texture, blend longer.
  3. Juice 4 large lemons to yield about 1 cup (240 ml) lemon juice, removing seeds.
  4. In a large pitcher, add the fresh mint leaves and gently muddle with a muddler or back of a spoon to release oils without over-muddling.
  5. Pour 1/2 cup (100 grams) granulated sugar over the muddled mint and stir gently to combine.
  6. Add the strawberry puree and lemon juice to the pitcher and stir well.
  7. Pour in 4 cups (960 ml) cold water and stir again. Adjust sugar or water to taste if needed.
  8. Add ice cubes to the pitcher or serve over ice in glasses. Chill for 10-15 minutes in the fridge if possible.
  9. Garnish with lemon slices, whole strawberries, and a sprig of mint before serving.
  10. Optional: Add sparkling water just before serving for fizz.

Notes

Adjust sugar to taste, muddle mint gently to avoid bitterness, chill for best flavor, add sparkling water for fizz just before serving. Frozen strawberries can be used for a slushy texture. Store leftovers in fridge up to 3 days.
