  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar

  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Toast the walnuts: Heat a small skillet over medium heat and add the walnuts. Stir frequently for about 3-5 minutes, or until golden and fragrant. Remove from heat and let cool.
  2. Wash and dry the mixed greens thoroughly. Use a salad spinner or pat dry with a clean kitchen towel.
  3. Slice the apples thinly, leaving the skin on for color and nutrients or peeling them if preferred. Toss slices with a splash of lemon juice to prevent browning.
  4. In a small mixing bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper. Taste and adjust seasoning as needed.
