These fudgy brownies feature a rich chocolate flavor and a signature shiny crackle top, delivering a perfect balance between gooey and cakey textures. Quick and easy to make with simple pantry ingredients, they are a crowd-pleasing dessert for any occasion.

Ingredients

Scale
  • 1 cup (227 grams) unsalted butter, melted
  • 2 cups (400 grams) granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (125 grams) all-purpose flour (or almond flour for gluten-free)
  • 3/4 cup (75 grams) unsweetened cocoa powder, sifted (preferably Dutch-processed)
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • Optional: 1/2 cup chopped walnuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Melt the butter in a microwave-safe bowl or on the stovetop and let it cool slightly until warm but not hot.
  3. In a large bowl, whisk together the granulated sugar and eggs vigorously for 3-4 minutes until the mixture is thick, pale, and glossy.
  4. Stir in the melted butter and vanilla extract until fully combined.
  5. In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder.
  6. Gently fold the dry ingredients into the wet mixture using a rubber spatula until just combined. Fold in optional walnuts or chocolate chips if using.
  7. Pour the batter into the prepared pan and smooth the top with a spatula.
  8. Bake for 25-30 minutes, checking at 25 minutes. Brownies are done when edges look set and the center is slightly soft but not wet. A toothpick inserted should come out with moist crumbs but no raw batter.
  9. Cool completely on a wire rack to allow brownies to set and make cutting easier.
  10. Lift the brownies out using the parchment overhang, cut into squares, and enjoy.

Notes

Whisk eggs and sugar thoroughly to create the shiny crackle top. Use good-quality Dutch-processed cocoa powder for smoothness. Avoid overbaking to keep brownies fudgy. Let brownies cool completely before cutting to prevent crumbling. Butter is preferred over oil for flavor and texture.
