Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease a 9×13-inch baking pan or line it with parchment paper, leaving a little overhang for easy removal.
  2. Melt the butter in a microwave-safe bowl or over a double boiler. Let it cool slightly.
  3. Mix sugar and melted butter in a large bowl until well combined, about 1-2 minutes using a hand mixer on medium speed.
  4. Add eggs, vanilla extract, and peppermint extract one at a time, beating well after each addition until the batter is glossy and smooth.
  5. In a separate bowl, whisk together flour, cocoa powder, and salt.
  6. Gradually fold the dry ingredients into the wet mixture using a spatula, stopping as soon as no dry flour streaks remain.
  7. Fold in the semi-sweet chocolate chips and mini mint chocolate chips gently to distribute evenly.
  8. Pour half the batter into the prepared pan and spread evenly.
  9. Prepare the ganache: Heat heavy cream in a small saucepan until it just begins to simmer. Remove from heat and pour over chopped dark chocolate in a bowl. Let sit for 2 minutes, then whisk until smooth. Stir in peppermint extract and a pinch of salt.
