  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 12 ounces pasta (fettuccine, penne, or spaghetti)
  • 4–5 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Bring a pot of salted water to a boil and cook your pasta according to package instructions. Drain and set aside.
  2. Season the chicken pieces with salt and pepper. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5–7 minutes, until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, lower the heat and add butter. Once melted, toss in the minced garlic. SautΓ© for 1–2 minutes until fragrant, stirring to prevent burning.
  4. Pour in chicken broth and heavy cream. Stir to combine, scraping up any browned bits from the skillet for added flavor. Let the mixture simmer for 2–3 minutes.
  5. Slowly whisk in the grated parmesan cheese, allowing it to melt into the sauce. Taste and adjust seasoning with salt and pepper.
  6. Return the cooked chicken to the skillet, along with the drained pasta. Toss everything together so the pasta is coated in the creamy sauce.
  7. Sprinkle fresh parsley over the top (optional) and serve immediately.
