  • 3/4 cup (90g) all-purpose flour (or gluten-free blend)
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (120g) cookie butter (such as Biscoff or Trader Joe’s Speculoos)
  • 1 tablespoon molasses
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, leaving an overhang.
  2. In a large bowl, whisk together melted butter and sugar until smooth and glossy (about 1 minute).
  3. Add eggs, milk, and vanilla extract. Whisk until fully combined (about 30 seconds).
  4. In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
  5. Gradually fold dry ingredients into wet mixture using a spatula until just combined. Do not overmix.
  6. In a medium bowl, stir together cookie butter, molasses, ginger, cinnamon, allspice, and cloves until creamy and spreadable.
  7. Pour brownie batter into prepared pan and smooth the top.
  8. Dollop spoonfuls of the cookie butter mixture on top (8-10 blobs). Swirl gently with a knife or skewer to create ribbons.
  9. Bake for 28-32 minutes, until edges are set and a toothpick inserted in the center comes out with moist crumbs.
  10. Cool in pan for 20 minutes, then lift out using parchment overhang. Slice into 16 squares.

For gluten-free brownies, use a 1:1 gluten-free flour blend. For vegan, substitute vegan margarine, flax eggs, and plant-based milk.
