  • 1 15-ounce can kidney beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika (smoked paprika preferred)
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Chop the onion and garlic, open the canned tomatoes and beans, and measure out your spices.
  2. Heat a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon (about 5-7 minutes). Drain excess grease if needed.
  3. Stir in the chopped onion and garlic. SautΓ© until the onions are softened and fragrant (about 3-4 minutes).
  4. Sprinkle in chili powder, cumin, paprika, oregano, salt, and pepper. Stir well to coat the beef and onions in the spices.
  5. Pour in the canned diced tomatoes and tomato paste. Stir to combine and bring the mixture to a simmer.
  6. Stir in the kidney beans and beef broth. Reduce the heat to low and let the chili simmer for 20-25 minutes, stirring occasionally.
