  • 1 cup shredded Monterey Jack or Mexican cheese blend
  • 8 corn tortillas (or flour tortillas)
  • 2 tablespoons vegetable oil
  • 2 medium tomatoes, fresh or canned
  • 2 chipotle peppers in adobo
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Fresh cilantro, optional for garnish
  • 1 lime, sliced for serving

Instructions

  1. Prepare the birria-style sauce: In a small saucepan, heat a drizzle of oil over medium heat. Add diced onions and minced garlic, and sautΓ© until fragrant and softened, about 3 minutes.
  2. Stir in the tomatoes, chipotle peppers, beef broth, cumin, oregano, salt, and pepper. Let it simmer for 10 minutes, stirring occasionally.
  3. Transfer the mixture to a blender and blend until smooth. Taste and adjust seasoning as needed.
  4. Prepare the turkey filling: In a bowl, mix the shredded turkey with about 1/4 cup of the birria-style sauce until coated.
  5. Assemble the quesadillas: Heat a skillet over medium heat and lightly grease with vegetable oil. Place a tortilla onto the skillet.
  6. Sprinkle a layer of cheese evenly over half the tortilla, followed by the turkey mixture. Fold the tortilla in half to cover the filling.
  7. Cook the quesadillas: Cook for about 2-3 minutes per side, gently pressing with a spatula, until the tortilla is golden and crispy and the cheese is melted.
  8. Repeat with the remaining tortillas and filling.
  9. Serve hot with extra birria sauce for dipping, a squeeze of lime, and a sprinkle of fresh cilantro if desired.
