  • 1 French baguette, sliced into Β½-inch thick pieces
  • 2 tablespoons olive oil
  • 2 cups red or black seedless grapes, washed and dried
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey (optional)
  • 8 ounces burrata cheese
  • Fresh basil leaves, for garnish
  • Sea salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Preheat your oven to 400Β°F (200Β°C).
  2. Line a sheet pan with parchment paper. Spread the washed grapes on the pan and drizzle with 1 tablespoon olive oil and 1 tablespoon balsamic vinegar. Sprinkle with a pinch of sea salt and black pepper. Toss to coat evenly.
  3. Roast the grapes in the oven for 12-15 minutes, or until they start to blister and release their juices. Stir halfway through to ensure even roasting.
  4. While the grapes are roasting, slice the baguette into Β½-inch thick pieces. Brush each slice lightly with olive oil.
  5. Toast the baguette slices in a skillet over medium heat or arrange them on a baking sheet and bake for 3-4 minutes until golden and crispy. Set aside.
  6. Once the grapes are done, let them cool slightly.
  7. Assemble the bruschetta: Place a spoonful of burrata on each toasted baguette slice. Top with a few blistered grapes and drizzle with a little honey and more balsamic vinegar.
  8. Garnish with fresh basil leaves, and finish with a sprinkle of sea salt and cracked black pepper.
  9. Serve immediately and enjoy!
