  • 10 large eggs, beaten
  • 1 cup milk
  • 6 large flour tortillas, cut into halves or quarters
  • 1 pound breakfast sausage, cooked and crumbled
  • 2 cups shredded cheddar and pepper jack cheese blend
  • 1 cup diced bell peppers
  • 1 medium onion, diced
  • 1 cup black beans, rinsed and drained
  • 1 cup salsa
  • Salt, pepper, garlic powder, and smoked paprika to taste
  • Optional toppings: sour cream, diced avocado, chopped cilantro, hot sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat a skillet over medium-high heat and cook the sausage until browned and crumbled. Remove and drain excess grease.
  3. In the same skillet, sauté diced bell peppers and onions for 3-5 minutes until softened.
  4. In a mixing bowl, whisk together eggs, milk, salt, pepper, garlic powder, and smoked paprika.
  5. Grease a 9×13 baking dish and spread a thin layer of salsa on the bottom.
  6. Layer tortilla pieces, sausage, sautéed veggies, black beans, shredded cheese, and a drizzle of the egg mixture. Repeat layers, ending with cheese on top.
  7. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the casserole is set and the cheese is bubbly.
  8. Let the casserole rest for 5-10 minutes before slicing and serving.
