  • 2 cups (480ml) milk
  • 1/4 cup (60ml) heavy cream
  • 2 tablespoons (25g) brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 100g (3.5 oz) chopped dark chocolate
  • 23 tablespoons (30-45ml) bourbon
  • Optional toppings: whipped cream, marshmallows, chocolate shavings, caramel drizzle

Instructions

  1. Brown the butter: In a small saucepan over medium heat, melt 2 tablespoons (30g) of unsalted butter, stirring frequently until it turns golden brown and gives off a nutty aroma. Be careful not to burn it!
  2. Add cocoa powder: Reduce the heat to low and whisk in 2 tablespoons (15g) of unsweetened cocoa powder until it’s fully incorporated into the butter.
  3. Add milk and cream: Slowly pour in 2 cups (480ml) of milk and 1/4 cup (60ml) of heavy cream, whisking constantly to blend everything together. Bring the mixture to a gentle simmer, but don’t let it boil.
  4. Sweeten and flavor: Stir in 2 tablespoons (25g) of brown sugar, 1/4 teaspoon of salt, and 1 teaspoon of vanilla extract. Whisk until the sugar dissolves.
  5. Add chocolate and bourbon: Remove the saucepan from heat and stir in 100g (3.5 oz) of chopped dark chocolate until melted. Add 2-3 tablespoons (30-45ml) of bourbon, adjusting to taste.
