Irresistible Cranberry Clafoutis Recipe with Vanilla Twist

A rustic French dessert with tart cranberries and a warm vanilla custard, perfect for any occasion.

  • 1 cup fresh cranberries
  • 1 cup whole milk (room temperature)
  • 1/4 cup heavy cream
  • 1/3 cup granulated sugar
  • 1/2 cup all-purpose flour (sifted)
  • 1 vanilla bean pod, scraped (or 1 teaspoon pure vanilla extract)
  • 3 large eggs (room temperature)
  • 1 tablespoon unsalted butter (softened, for greasing the pan)
  • Powdered sugar (optional, for dusting)
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your baking dish with softened butter.
  2. Wash and dry the cranberries. If using vanilla bean, scrape out the seeds and set aside.
  3. In a blender or mixing bowl, combine the milk, heavy cream, sugar, flour, eggs, vanilla bean seeds (or extract), and salt. Blend or whisk until smooth.
  4. Place the cranberries evenly in the greased baking dish. Pour the batter over the top, ensuring the cranberries are distributed evenly.
  5. Bake for 35-40 minutes, or until the clafoutis is golden and puffed. A toothpick inserted into the center should come out clean.
  6. Let the clafoutis cool slightly—it will deflate as it cools, which is normal.
  7. Dust with powdered sugar before serving for an elegant touch.

Notes

Room temperature ingredients ensure smooth blending and even baking. If cranberries float to the top during baking, it adds to the rustic charm.
