This recipe combines the tangy zing of dill pickles, the crunch of golden Parmesan crust, and the juicy tenderness of chicken for a bold and mouthwatering dish perfect for dinner.

  • 24 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 eggs, beaten
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Place the chicken breasts in a baking dish and pour pickle juice over them until fully submerged. Cover and refrigerate for at least 2 hours or overnight.
  2. Preheat your oven to 425Β°F (220Β°C). Line a baking sheet with parchment or foil.
  3. In one bowl, mix breadcrumbs, grated Parmesan, garlic powder, salt, and pepper. In another bowl, beat the eggs.
  4. Remove chicken from the pickle juice and pat dry with paper towels. Dip each piece into the beaten eggs, then coat with the breadcrumb-Parmesan mixture, pressing lightly to adhere.
  5. Place the coated chicken on a wire rack set over the baking sheet or directly on the parchment-lined sheet. Spray lightly with cooking spray.
  6. Bake for 20-25 minutes, flipping once halfway through, until the chicken is golden brown and crispy. Use a meat thermometer to ensure the internal temperature reaches 165Β°F (74Β°C).
  7. Let the chicken rest for 5 minutes before serving.

Notes

For extra crunch, repeat the egg and breadcrumb coating process twice. Use a wire rack for even crispiness and broil for 2-3 minutes if the crust isn’t browning evenly.
