  • 4 tablespoons unsalted butter, softened
  • 1/4 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 large egg yolks
  • 1 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of garlic powder (optional)

Instructions

  1. Preheat your oven to 425Β°F (220Β°C) and line a baking sheet with parchment paper.
  2. Place the peeled and cubed potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes or until the potatoes are fork-tender.
  3. Drain the potatoes and return them to the pot. Mash them until smooth using a potato masher or ricer.
  4. While the potatoes are still warm, stir in the softened butter, heavy cream, and freshly grated Parmesan. Mix until everything is well combined and creamy.
  5. Season the mixture with salt, pepper, nutmeg, and a pinch of garlic powder if desired.
  6. In a separate bowl, lightly whisk the egg yolks and fold them into the potato mixture.
  7. Transfer the potato mixture to a piping bag fitted with a large star tip. Pipe swirls onto the prepared baking sheet, leaving space between each one.
  8. Bake for 15-20 minutes, or until the tops are golden brown and slightly crisp.
  9. Remove from the oven and let them cool slightly before serving.

Notes

Use starchy potatoes like Russet or Yukon Gold for the best texture. Pipe carefully for uniform swirls, and bake immediately to maintain their shape. Experiment with flavors by adding garlic, herbs, or different cheeses.
