A gourmet twist on classic popcorn, infused with the savory richness of duck fat and the earthy aroma of fresh rosemary. Perfect for any occasion!

Ingredients

Scale
  • 2 tablespoons duck fat
  • 1/2 cup popcorn kernels (approximately 120g)
  • 12 sprigs fresh rosemary, finely chopped
  • 1/2 teaspoon fine sea salt, or to taste

Instructions

  1. Place a large heavy-bottomed pot on medium heat and add 2 tablespoons of duck fat. Let it melt and heat for about 2 minutes until it starts to shimmer slightly.
  2. Pour 1/2 cup (120g) of popcorn kernels into the pot and stir gently to coat them evenly in the duck fat.
  3. Cover the pot with a lid, leaving a small crack for steam to escape. Shake the pot gently to prevent the kernels from burning and to encourage even popping. This should take about 3–5 minutes.
  4. Once the popping slows down to a few pops every couple of seconds, remove the pot from heat to avoid burning the popcorn.
  5. Immediately sprinkle the finely chopped rosemary and 1/2 teaspoon of salt over the hot popcorn. Use a wooden spoon or heatproof spatula to toss everything together until evenly coated.
  6. Transfer the popcorn to a large bowl and serve while warm for maximum flavor.

Notes

[‘Don’t overheat the duck fat as it has a lower smoke point.’, ‘Shake the pot gently while the kernels pop to ensure even heat distribution and prevent burning.’, ‘Use fresh rosemary for vibrant flavor; avoid dried rosemary.’, ‘Season the popcorn immediately after popping for the best flavor.’]
