  • 1 packet (2 ΒΌ tsp) active dry yeast
  • 1 Β½ cups (355 ml) warm water
  • 1 tbsp (12 g) brown sugar
  • 1 tsp salt
  • Β½ cup (120 g) baking soda
  • ΒΌ cup (60 ml) honey
  • 2 tbsp (30 g) melted unsalted butter
  • Coarse salt for topping

Instructions

  1. Activate the yeast: Combine yeast, warm water, and brown sugar in a small bowl. Let sit for 5 minutes until foamy.
  2. Make the dough: Mix flour, salt, and yeast mixture in a large bowl. Knead for 7-8 minutes until smooth.
  3. Let it rise: Cover the bowl with a towel and let the dough rise for 1 hour in a warm spot until doubled in size.
  4. Shape the pretzels: Divide the dough into 12 pieces, roll each into a long rope, and twist into pretzel shapes.
  5. Prepare the baking soda bath: Boil water and baking soda. Drop each pretzel in for 30 seconds, then place on a parchment-lined baking sheet.
  6. Bake: Brush pretzels with melted butter, sprinkle with coarse salt, and bake at 425Β°F (220Β°C) for 12-15 minutes until golden brown.
  7. Make the honey butter glaze: Mix honey and melted butter. Brush the glaze over warm pretzels.
  8. Let cool slightly before serving.
