Irresistible Loaded Mashed Potato Casserole Recipe with Bacon

This loaded mashed potato casserole combines creamy mashed potatoes, crispy bacon, and gooey cheddar cheese for the ultimate comfort food side dish.

  • 3 pounds russet potatoes, peeled and chopped
  • 4 tablespoons unsalted butter, melted
  • 1 cup whole milk
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded sharp cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • Green onions, chopped (optional)

Instructions

  1. Peel and chop 3 pounds of russet potatoes into even chunks. Place them in a large pot of salted water and bring to a boil. Cook for 15-20 minutes, or until fork-tender.
  2. Drain the potatoes and return them to the pot. Mash using a potato masher or ricer until smooth. Add 4 tablespoons of melted butter, 1 cup of milk, and 1 cup of sour cream. Stir until creamy and well combined.
  3. Add 1 teaspoon of garlic powder, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mix thoroughly and adjust seasoning as needed.
  4. Fold in 1 1/2 cups of shredded cheddar cheese, reserving 1/2 cup for topping.
  5. Cook 6 slices of bacon until crispy and crumble into small pieces. Stir half into the potato mixture and reserve the rest for topping.
  6. Transfer the mashed potato mixture into a greased 9×13-inch baking dish. Spread evenly and sprinkle the reserved cheddar cheese and bacon over the top.
  7. Preheat your oven to 375Β°F (190Β°C). Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  8. Let the casserole cool for 5 minutes, then sprinkle with chopped green onions. Serve warm and enjoy!
