Ingredients

  • Flatbread (store-bought or homemade)
  • Fresh basil pesto
  • Cooked chicken (shredded or diced)
  • Mozzarella cheese (shredded or fresh slices)
  • Cherry tomatoes (halved)
  • Red onion (thinly sliced)
  • Olive oil
  • Optional toppings: fresh arugula, grated Parmesan, crushed red pepper flakes

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the flatbread on the baking sheet and drizzle lightly with olive oil. Spread a generous layer of pesto evenly over the surface.
  3. Scatter shredded or diced chicken over the pesto layer. Add mozzarella cheese, cherry tomatoes, and red onion slices evenly across the flatbread.
