  • 1 clove garlic, minced
  • 23 tablespoons water
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Wash and dry the cauliflower thoroughly. Cut it into bite-sized florets, making sure they’re roughly the same size for even cooking.
  3. In a large mixing bowl, toss the cauliflower florets with olive oil, garlic powder, smoked paprika, and a generous pinch of salt and pepper. Mix well to ensure each piece is evenly coated.
  4. Spread the cauliflower in a single layer on the prepared baking sheet. Don’t overcrowd the pan to ensure even roasting.
  5. Place the baking sheet in the preheated oven and roast for 25-30 minutes, turning the florets halfway through. Roast until golden brown with slightly crispy edges.
  6. While the cauliflower is roasting, prepare the tahini drizzle. In a small bowl, whisk together tahini, fresh lemon juice, minced garlic, and water. Adjust the water to reach your desired consistency—it should be pourable but not too thin.
  7. Taste the tahini sauce and adjust the seasoning as needed. Add a pinch of salt or an extra squeeze of lemon if desired.
  8. Once the cauliflower is done roasting, transfer it to a serving platter. Drizzle the tahini sauce generously over the top.
  9. Garnish with freshly chopped parsley for a pop of color and extra flavor. Serve immediately and enjoy!
