  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper, freshly ground
  • Fresh thyme (optional), for garnish

Instructions

  1. Preheat the oven to 400Β°F (200Β°C). Line a sheet pan with parchment paper for easy cleanup.
  2. Wash and peel the carrots, trimming the ends. Slice large carrots in half lengthwise for even cooking.
  3. In a small bowl, whisk together olive oil, honey, balsamic vinegar, salt, and pepper. Taste and adjust if needed.
  4. Place the carrots in a mixing bowl and pour the glaze over them. Toss until evenly coated.
  5. Spread the carrots out in a single layer on the sheet pan, ensuring they don’t overlap.
  6. Roast in the oven for 15-20 minutes, flipping the carrots halfway through for balanced caramelization.
  7. Check for doneness; the carrots should be tender and slightly caramelized around the edges. Roast for an additional 5 minutes if softer carrots are preferred.
  8. Remove from the oven and sprinkle with fresh thyme, if using. Serve immediately.
