Ingredients

  • Cooked turkey, shredded or sliced

  • Salt
  • Pepper
  • All-purpose flour (for homemade crepes)
  • Milk (whole milk or preferred alternative, for homemade crepes)
  • Eggs (large, for homemade crepes)
  • Butter (melted, for homemade crepes)

Instructions

  1. Prepare the crepes: If using store-bought, warm them gently in a non-stick pan. If making from scratch, whisk together 1 cup all-purpose flour, 2 eggs, 1 ¼ cups milk, 2 tablespoons melted butter, and a pinch of salt until smooth. Let the batter rest for 10-15 minutes. Grease a hot skillet with butter, pour about ¼ cup of batter into the center, and swirl to coat the pan evenly. Cook for 1-2 minutes per side until lightly golden. Repeat until all batter is used.
  2. Prepare the filling: Shred or slice the cooked turkey into bite-sized pieces. Lightly season with salt and pepper. Slice the brie into thin pieces for easy melting.
  3. Assemble the crepes: Lay each crepe flat and add a layer of turkey, followed by brie slices. Spoon cranberry sauce over the top.
