  • 2 tablespoons granulated sugar or light brown sugar
  • 1 teaspoon freshly grated ginger
  • 1 clove garlic, minced
  • Green onions, thinly sliced for garnish (optional)

Instructions

  1. Cut chicken thighs into 1-inch cubes and pat dry with paper towels to remove excess moisture.
  2. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  3. In a small saucepan over medium heat, combine soy sauce, mirin, sake, sugar, grated ginger, and minced garlic. Stir well and bring to a gentle boil.
  4. Reduce heat and simmer the sauce until it thickens to a syrupy consistency, about 10-12 minutes. Watch closely to avoid burning.
  5. Drain skewers and thread 4-5 pieces of chicken per skewer, leaving space between pieces for even cooking.
  6. Preheat grill or grill pan to medium-high heat (about 400°F). Lightly oil the grates or pan to prevent sticking.
  7. Grill skewers for 3-4 minutes per side, basting generously with tare glaze after flipping. Repeat basting and turning 2-3 times until chicken is cooked through and glossy. Internal temperature should reach 165°F.
  8. Transfer skewers to a serving plate, garnish with sliced green onions if desired, and serve immediately.
