  • 1 tablespoon olive oil (extra-virgin preferred)
  • 1 pound ground beef or Italian sausage (or half-and-half blend)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 (28-ounce) can crushed tomatoes
  • 1 (15-ounce) can tomato sauce
  • 4 cups low-sodium chicken broth (or vegetable broth for vegetarian)
  • 8 ounces lasagna noodles, broken into 2-inch pieces (or bow-tie, fusilli, or rotini pasta)
  • 1 cup cottage cheese or ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley or basil (for garnish)

Instructions

  1. Dice the onion and mince the garlic. In a small bowl, combine cottage cheese or ricotta, mozzarella, and parmesan cheese. Set aside in the fridge.
  2. Heat olive oil in a large soup pot over medium heat. Add ground beef or Italian sausage and cook, breaking it up, for 5-6 minutes until browned. Drain excess fat if needed.
  3. Add diced onion and garlic to the pot. Sauté for 3-4 minutes until fragrant and soft.
  4. Sprinkle in oregano, basil, red pepper flakes (if using), salt, and black pepper. Cook for another minute.
  5. Pour in crushed tomatoes, tomato sauce, and chicken or vegetable broth. Stir well, scraping up any browned bits. Bring to a gentle boil, then reduce heat and simmer uncovered for 15 minutes.
  6. Increase heat to medium-high. Add broken lasagna noodles (or substitute pasta) and simmer for 10-12 minutes, stirring occasionally, until noodles are tender but not mushy.
  7. Remove soup from heat. Ladle hot soup into bowls, top each with a generous scoop of the cheese mixture, and sprinkle with chopped parsley or basil.
  8. Let the cheese melt for a minute before serving.

Notes

For vegetarian, use plant-based crumbles and vegetable broth. For gluten-free, use gluten-free noodles. Dairy-free cheese alternatives work well. Add extra veggies like spinach or zucchini for nutrition. Soup base freezes well; cook noodles fresh when reheating. Adjust broth for desired consistency.
