A hearty one-pan dinner combining ground beef, tender potatoes, and gooey cheese for a comforting and quick meal perfect for busy weeknights.

  • 1 lb ground beef (80/20 lean)
  • 2 medium russet potatoes, peeled and diced into 1/2-inch cubes
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded sharp cheddar cheese
  • 1 cup beef broth
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp Italian seasoning
  • Optional: fresh parsley for garnish, sour cream, red chili flakes

Instructions

  1. Peel and dice the potatoes into small cubes (about 1/2 inch). Chop the onion and mince the garlic. Shred the cheddar cheese if not pre-shredded.
  2. Heat the skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spatula. Drain excess grease if needed and set the beef aside.
  3. In the same skillet, add a drizzle of olive oil and sautΓ© the onions until translucent, about 3 minutes. Add the garlic and cook for another minute.
  4. Add the diced potatoes to the skillet, along with a pinch of salt, pepper, and paprika. Stir to coat the potatoes in the oil and seasonings, then add the beef broth. Cover and cook for 10-12 minutes, stirring occasionally, until the potatoes are tender.
  5. Return the cooked ground beef to the skillet and mix it with the potatoes and onions. Taste and adjust seasonings as needed.
  6. Sprinkle the shredded cheddar cheese evenly over the top. Cover the skillet for 2-3 minutes or until the cheese is melted and bubbly.
  7. Remove from heat and garnish with fresh parsley or your favorite toppings. Serve hot and enjoy!

Notes

For extra cheesiness, layer the cheese by adding half, stirring, and then topping with the rest. Customize seasonings to your taste, and use freshly shredded cheese for better meltability.
