  • 2 bay leaves
  • 4 garlic cloves, crushed
  • Fresh herbs (rosemary, thyme, or sage)
  • Butter, melted for basting
  • Paprika or smoked paprika (optional)

Instructions

  1. Prepare the Brine: In a large stockpot, combine 8 cups of water, 1 cup of pure maple syrup, 1 cup of bourbon, 1 cup of kosher salt, 1/2 cup of brown sugar, 1 tablespoon of whole peppercorns, 2 bay leaves, 4 crushed garlic cloves, and a handful of fresh herbs. Stir until the salt and sugar dissolve.
  2. Brine the Turkey: Place the turkey breast in the brining container and pour the cooled brine mixture over it. Make sure the turkey is completely submerged. Cover and refrigerate for 8-12 hours.
  3. Preheat the Oven: Remove the turkey from the brine and pat dry with paper towels. Preheat your oven to 375°F (190°C).
  4. Season and Roast: Place the turkey breast on a roasting rack in a pan. Brush it generously with melted butter and sprinkle with paprika or smoked paprika. Roast for 1.5-2 hours, or until the internal temperature reaches 165°F (74°C).
  5. Baste Frequently: Every 30 minutes, baste the turkey with more melted butter for a golden, crispy skin.
