A sweet and savory side dish featuring caramelized Brussels sprouts and carrots glazed with maple syrup, perfect for fall gatherings or weeknight dinners.

  • 1 pound Brussels sprouts, trimmed and halved
  • 4 medium-sized carrots, peeled and cut into 1-inch chunks
  • 2 tablespoons olive oil
  • 3 tablespoons pure maple syrup
  • 1 teaspoon salt
  • ½ teaspoon black pepper, freshly ground
  • ½ teaspoon garlic powder
  • Optional: Chopped pecans or walnuts for added crunch

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the Brussels sprouts and carrots. Trim the ends off the sprouts and slice them in half. Peel the carrots and cut them into 1-inch chunks.
  3. In a large mixing bowl, whisk together olive oil, maple syrup, salt, black pepper, and garlic powder until well combined.
  4. Add the Brussels sprouts and carrots to the bowl with the glaze. Toss well to ensure every piece is coated evenly.
  5. Spread the vegetables in a single layer on a prepared baking sheet lined with parchment paper or greased aluminum foil.
  6. Roast the vegetables in the preheated oven for 20 minutes, flipping them halfway through.
  7. Check for doneness after 20 minutes. Vegetables should be tender and have golden, caramelized edges. Roast for another 5-10 minutes if needed.
  8. If using nuts, sprinkle them over the vegetables during the last 5 minutes of roasting.
  9. Remove the vegetables from the oven and allow them to cool for a few minutes before serving.
