  • 2 tablespoons mayonnaise
  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Fresh cilantro, chopped (optional)
  • 2 tablespoons lime juice
  • Tortilla chips, crushed (for garnish)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion and garlic, sautΓ©ing until softened and fragrant, about 3-4 minutes.
  2. Add the sweet corn kernels and spices (chili powder and paprika). Stir well and cook for another 5 minutes to let the flavors meld.
  3. Pour in the chicken or vegetable broth and bring to a gentle simmer. Allow it to cook for 10 minutes to infuse the flavors.
  4. Transfer the soup to a blender (or use an immersion blender) and blend until smooth. If you prefer a chunkier texture, pulse lightly instead.
  5. Return the soup to the pot and stir in the heavy cream, mayonnaise, and Cotija cheese. Cook for an additional 5 minutes over low heat, stirring frequently.
  6. Finish by adding fresh lime juice and adjusting seasoning to taste (add more chili powder or salt if needed).
  7. Serve hot, garnished with chopped cilantro, crushed tortilla chips, and a sprinkle of Cotija cheese.
