  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup (135g) semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, beat 1/2 cup (115g) of softened unsalted butter, 1/2 cup (100g) granulated sugar, and 1/3 cup (70g) brown sugar together until light and fluffy (about 2-3 minutes).
  3. Mix in 1 large egg, 1 teaspoon vanilla extract, and 1/2 teaspoon mint extract. Make sure everything is well combined.
  4. In a separate bowl, whisk together 1 1/4 cups (160g) all-purpose flour, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing to keep your cookies tender.
  6. Stir in 3/4 cup (135g) semi-sweet chocolate chips using a rubber spatula.
  7. Scoop out dough balls (about 1 tablespoon each) and place them on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 8-10 minutes or until the edges are slightly golden. The centers might look a bit soft—that’s okay!
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a cooling rack.
