Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish generously with butter or non-stick spray.
  2. Tear the croissants into bite-sized pieces, about 1 to 2 inches. Toss them lightly in the baking dish to create an even layer.
  3. In a large bowl, cream the softened butter and sugar together until light and fluffy (about 3 minutes with a hand mixer or 5 minutes by hand).
  4. Add eggs one at a time, whisking each fully into the butter-sugar mixture before adding the next.
  5. Stir in the almond flour gently, followed by the almond extract and vanilla extract until the batter is thick and velvety.
  6. Slowly whisk in the milk gradually until fully incorporated, creating a pourable but thick custard.
  7. Pour the frangipane custard evenly over the croissant pieces in the baking dish. Press the croissants gently down to soak up the custard.
  8. Sprinkle sliced almonds evenly over the top for crunch and aroma.
  9. Bake for 35–40 minutes, or until the custard is set and the top is golden brown. A toothpick inserted in the center should come out clean but moist.
