  • 8 ounces ground pork
  • 1 cup whole milk
  • 3/4 cup dry white wine (e.g., Pinot Grigio)
  • 28 ounces canned whole tomatoes, crushed by hand or San Marzano
  • 2 tablespoons tomato paste
  • Salt to taste (start with 1 teaspoon)
  • Freshly ground black pepper to taste
  • 1 bay leaf (optional)
  • Pinch of freshly grated nutmeg

Instructions

  1. Prepare the soffritto: Heat olive oil and butter over medium heat until melted and shimmering. Add finely chopped onion, carrot, and celery. Sauté gently until softened and fragrant, about 8 minutes, stirring often to sweat the vegetables without browning.
  2. Add garlic and cook for 1 minute until aromatic, being careful not to burn it.
  3. Increase heat to medium-high. Add ground beef and pork. Break up the meat with a spoon and cook until no pink remains and golden bits form, about 8-10 minutes.
  4. Slowly add the milk, stirring well. Simmer gently until the milk mostly evaporates, about 5 minutes.
  5. Pour in the white wine and let it simmer until mostly evaporated, about 5 minutes.
  6. Stir in crushed tomatoes, tomato paste, bay leaf, salt, pepper, and freshly grated nutmeg. Mix thoroughly.
  7. Reduce heat to very low. Partially cover with a lid, leaving a small gap for steam to escape. Let the sauce simmer gently for 4 hours and 30 minutes, stirring every 20-30 minutes to prevent sticking. The sauce should thicken and deepen in color.
  8. After simmering, taste and adjust seasoning with salt and pepper as needed. Remove bay leaf before serving.

Notes

Use whole milk for creaminess; for dairy-free, substitute with coconut or almond milk. Use San Marzano tomatoes for best flavor. Stir every 20-30 minutes during simmer to prevent burning. If sauce is too dry, add water or broth; if too watery near the end, increase heat slightly and stir more frequently.
