Ingredients

Scale
  • 2 ½ cups (315g) all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup (230g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tbsp pure vanilla extract
  • 1 cup (240ml) whole milk, room temperature
  • 1 ½ cups (340g) unsalted butter, softened (for buttercream)
  • 5 cups (600g) powdered sugar, sifted
  • 2 tbsp heavy cream or milk
  • 1 tsp pure vanilla extract (for buttercream)
  • Gel food coloring in favorite team colors
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans and line bottoms with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In mixer bowl, beat 1 cup softened butter and 1 ¾ cups sugar on medium speed for 3-4 minutes until light and fluffy.
  4. Beat in 4 large eggs one at a time, then stir in 1 tbsp vanilla extract.
  5. Reduce mixer speed to low. Add dry ingredients in three additions, alternating with 1 cup whole milk in two additions, starting and ending with flour. Mix just until combined.
  6. Divide batter evenly into prepared pans. Smooth tops with spatula. Bake 30-35 minutes or until toothpick inserted near center comes out clean.
  7. Let cakes cool in pans for 10 minutes, then transfer to cooling rack to cool completely.
  8. For buttercream, beat 1 ½ cups softened butter on medium speed until creamy. Gradually add 5 cups powdered sugar, alternating with 2 tbsp heavy cream and 1 tsp vanilla. Add pinch of salt. Beat on high for 3-4 minutes until fluffy and spreadable.
  9. Divide buttercream into bowls and tint with gel food coloring to match favorite sports jersey colors. Mix until smooth and vibrant.
  10. Place one cake layer on serving plate. Spread thick layer of buttercream on top. Add second layer and apply thin crumb coat all over cake. Chill for 20 minutes to set.
  11. Use piping bags fitted with medium round and star tips to create stripes, numbers, and name details on cake surface.
  12. Refrigerate decorated cake for 30 minutes to firm frosting. Bring to room temperature before serving.

Notes

Use room temperature ingredients for smooth batter and frosting. Avoid overmixing after adding flour to prevent tough cake. Use gel food coloring for vibrant, stable buttercream. Chill cake between frosting layers to prevent melting. Practice piping on parchment paper before decorating. Keep hands cool to avoid softening buttercream.
