Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • 46 tablespoons ice water
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • ½ cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ¼ teaspoon salt
  • 1 cup pecans, chopped
  • ½ cup light corn syrup
  • ½ cup brown sugar, packed
  • 2 tablespoons unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the crust: In a large mixing bowl, combine the flour and salt. Add the cubed butter and use a pastry cutter (or fork) to cut the butter into the flour until it resembles coarse crumbs. Add ice water one tablespoon at a time, mixing gently until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
  2. Preheat the oven: Preheat your oven to 350°F (175°C). Roll out the chilled dough on a floured surface to fit your 9-inch pie dish. Carefully transfer the crust to the dish, pressing it into the edges and trimming any excess. Flute the edges or press them down with a fork for a decorative look.
  3. Make the brownie layer: In a mixing bowl, whisk together the melted butter and granulated sugar until smooth. Add eggs and vanilla extract, whisking until fully combined. Sift in the flour, cocoa powder, and salt, then gently fold until just combined. Pour the brownie batter into the prepared pie crust, spreading it evenly.
  4. Prepare the pecan topping: In another mixing bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, and vanilla extract until smooth. Stir in the chopped pecans. Pour the mixture over the brownie layer in the pie dish, spreading it out evenly.
  5. Bake the pie: Place the pie dish on a baking sheet and bake for 45–50 minutes, or until the center is set but slightly jiggly. The crust should be golden brown, and the pecan topping should be bubbly.
  6. Cool and serve: Allow the pie to cool completely before slicing to ensure the layers set properly. Serve with a dollop of whipped cream or a scoop of vanilla ice cream for ultimate indulgence!
