  • 1 large egg yolk

  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium-sized mixing bowl, beat the softened butter and powdered sugar together using an electric mixer until light and fluffy, about 2-3 minutes.
  3. Add the egg yolk and vanilla extract, and mix until fully incorporated.
  4. Sift the all-purpose flour, cocoa powder, and salt into the butter mixture. Gently fold the dry ingredients into the wet ingredients until a soft dough forms. Be careful not to overmix, as this could make the cookies tough.
  5. Transfer the dough to a piping bag fitted with a star tip. Pipe swirls of dough onto the prepared baking sheets, spacing them about 1 inch apart.
  6. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are firm but not browned. They should still feel soft to the touch.
  7. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a cooling rack to cool completely.
  8. Once the cookies have cooled, store them in an airtight container—or enjoy them immediately with a cup of tea or coffee!
