  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 3 cups (375g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Holiday sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, cream together 1 cup (230g) of unsalted butter and 1 cup (200g) of granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add 1/2 cup (100g) of brown sugar and continue mixing for another minute.
  4. Beat in 2 large eggs, one at a time, and then add 2 teaspoons of pure vanilla extract.
  5. In a separate bowl, whisk together 3 cups (375g) all-purpose flour, 1 teaspoon baking powder, and 1/2 teaspoon salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing to keep the cookies tender.
  7. Divide the dough into two equal portions, flatten each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  8. Once chilled, roll out the dough on a lightly floured surface to about 1/4-inch (0.6cm) thickness.
  9. Use your favorite cookie cutters to cut out shapes and transfer them to the prepared baking sheets, leaving about 1 inch (2.5cm) between each cookie.
  10. Decorate the cookies with holiday sprinkles before baking.
  11. Bake for 9-11 minutes or until the edges are just lightly golden. Be careful not to overbake!
  12. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a cooling rack to cool completely.
