Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream together 1 cup of softened unsalted butter, 3/4 cup of granulated sugar, and 1/2 cup of packed brown sugar until light and fluffy, about 2-3 minutes.
  3. Add 2 large eggs, one at a time, mixing well after each addition. Stir in 1 teaspoon of vanilla extract and 1 tablespoon of fresh orange zest.
  4. In a separate bowl, whisk together 2 1/4 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  6. Gently fold in 1 cup of dried cranberries and, if desired, 1/2 cup of white chocolate chips.
  7. Scoop the dough onto the prepared baking sheets using a tablespoon or cookie scoop, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. The centers may look slightly underbaked for a soft, chewy texture.
