Perfect Dinner Party Baked Brie Wheel Recipe with Fig Jam and Walnut Crust

A quick and elegant baked brie wheel wrapped in puff pastry with a crunchy walnut crust and sweet fig jam, perfect for dinner parties or casual gatherings.

  • 8-ounce (225g) wheel of creamy brie cheese, preferably at room temperature
  • 1 sheet frozen puff pastry, thawed
  • 1/4 cup (60ml) fig jam
  • 1/2 cup (60g) chopped walnuts, toasted
  • 1 large egg, beaten (for egg wash)
  • Honey (optional, for drizzling)
  • Fresh thyme or rosemary sprigs (optional, for garnish or inside)

Instructions

  1. Preheat oven to 350°F (175°C). Spread chopped walnuts on a baking sheet and toast for about 5 minutes until fragrant. Remove and let cool.
  2. On a lightly floured surface, roll out the thawed puff pastry sheet to smooth out creases, about 12×12 inches (30×30 cm). Place the pastry on a parchment-lined baking sheet.
  3. Spread about 2 tablespoons of fig jam in a circle roughly the size of the brie wheel in the center of the pastry.
  4. Place the brie wheel on top of the jam. Add a sprig of fresh thyme or rosemary on or under the brie if desired.
  5. Fold the puff pastry edges up and around the brie, pinching gently to seal. Trim excess pastry but leave enough to fully encase the cheese. Flip the wrapped brie so the seam is on the bottom.
  6. Press the toasted walnuts onto the outside of the pastry. Brush a little beaten egg on the pastry first if needed to help walnuts adhere.
  7. Brush the entire pastry surface with the beaten egg for a shiny, golden crust.
  8. Bake for 20-25 minutes until the pastry is puffed and golden brown and the brie inside is melty but not oozing.
  9. Let the baked brie rest for about 5 minutes before serving. Drizzle with honey if desired.

Notes

If walnuts brown too quickly, tent the brie loosely with foil halfway through baking. Chill the wrapped brie in the fridge for 10-15 minutes before baking to help pastry puff. Use egg wash generously to help walnuts stick and achieve a golden crust. Let the baked brie rest before slicing to prevent cheese from spilling out.
