Ingredients

  • Cooked chicken breast, diced
  • Mayonnaise
  • Earl Grey tea leaves, finely ground
  • Celery, finely chopped
  • Green onions, thinly sliced
  • Lemon juice
  • Lavender honey (or regular honey infused with dried lavender)
  • Sea salt flakes

Instructions

  1. Prepare the Lavender Cucumber Filling: In a small bowl, mix the softened cream cheese with a pinch of dried lavender buds, chopped dill, lemon zest, salt, and pepper. Let it sit for 5 minutes. Thinly slice the cucumber and pat dry with a paper towel.
  2. Make the Earl Grey Chicken Salad: Heat 1/4 cup (60 ml) heavy cream until steaming but not boiling. Add 1 teaspoon of finely ground Earl Grey tea leaves, steep for 3 minutes, then strain out the leaves. Let the cream cool slightly. In a bowl, combine diced chicken, celery, green onions, mayonnaise, lemon juice, and the cooled Earl Grey cream. Season with salt and pepper. Chill for 10 minutes.
  3. Prepare the Lavender Honey Butter: Soften the butter in a small bowl, then stir in 2 tablespoons of lavender honey. Taste and adjust sweetness; add a pinch of sea salt flakes. Set aside.
  4. Assemble the Sandwiches: Lightly butter each slice of bread with unsalted butter. Spread the lavender cucumber cream cheese on one slice and layer with cucumber slices. Top with another slice of bread and gently press. Repeat with chicken salad and lavender honey butter fillings.
  5. Cut and Serve: Using a sharp knife or sandwich cutter, trim crusts and cut into small rectangles or elegant shapes. Arrange on a platter and garnish with fresh lavender sprigs or edible flowers if desired.
