  • 1 lb fresh carrots, peeled and sliced diagonally into 1/4-inch thick slices (baby carrots also work)
  • 2 tbsp unsalted butter
  • 3 tbsp pure maple syrup
  • 2 tbsp brown sugar (light or dark)
  • Pinch of kosher salt
  • 1/4 tsp ground cinnamon (optional)
  • 1/4 cup water

Instructions

  1. Peel and slice your carrots diagonally into 1/4-inch thick slices. Baby carrots can be used whole for ease.
  2. In a medium saucepan, add the carrots and 1/4 cup water. Cover and cook over medium heat for 8-10 minutes, stirring occasionally, until the carrots are just tender. Drain any remaining water if needed.
  3. Lower the heat to medium-low. Add the butter, maple syrup, brown sugar, and a pinch of salt to the pan. Stir until the butter is melted and the sugar is dissolved.
  4. Toss the cooked carrots in the glaze, making sure each slice is coated. Cook for another 3-4 minutes, stirring occasionally, until the glaze thickens and coats the carrots beautifully.
  5. If desired, sprinkle in the ground cinnamon and stir to combine.
