  • 2 large eggs, room temperature
  • ¾ cup (180ml) whole milk, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (240ml) heavy cream
  • ½ cup (65g) powdered sugar
  • Food coloring (optional)
  • Sprinkles or other toppings

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your mini cake pans or line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together all-purpose flour, granulated sugar, baking powder, and salt.
  3. In another bowl, beat unsalted butter until creamy. Add eggs and beat until fully incorporated. Mix in pure vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with whole milk. Start and finish with the dry ingredients.
  5. Mix until the batter is smooth, but do not overmix.
  6. Divide the batter evenly among the prepared pans or liners, filling each about ¾ full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. The tops should be golden and slightly springy to the touch.
  8. Let the cakes cool in the pans for 5-10 minutes, then transfer them to a wire rack to cool completely.
  9. Prepare the frosting by beating heavy cream and powdered sugar together until stiff peaks form. Add food coloring if desired.
  10. Decorate the cooled mini cakes with frosting using a piping bag. Add sprinkles or other toppings for a festive touch.

Notes

Use room-temperature ingredients for a tender crumb. Avoid overmixing the batter to keep the cakes fluffy. Cool completely before frosting to prevent melting.
